Default Chicken Parma

I've just read this excellent thread on Chicken Kiev:
my dinner of chicken kiev,, this is worth the read!! NO CARBS KIEV
Will be trying this next week.

BUT - here is my take on low-carb Chicken Parma (basically Chicken Parma minus the breading):
Grill a Chicken breast fillet
Whack some ham on the grill with it for last couple of minutes
Put the ham on top of the chicken (or, for gourmet style , slice the fillet lengthwise and put the ham in the middle)
Put the chicken on a plate
Sprinkle some grated cheese on top (whatever cheese you like works for me)
Pour on some hot tomato sauce (not too much, this is where the carbs are!) - I make mine with onion, tomato, basil, oregano, black pepper, salt, in the microwave
Serve with vegies, or salad (mashed cauliflower soaks up the sauce and juices nicely).

I'm posting this in the hope of getting ideas for making it even better!

Yum, I love chicken parm! I have use fresh sliced tomatoes cooked under the broiler for a few minutes with seasonings. I thought it had much better flavor than the sauce! I broil up squash and zucchini coated with olive oil at the same time

Thanks KariAnna - just sliced fresh tomatoes with some seasoning sounds like a great idea, and easy (important factor for me ). Will be trying that!

I slice the chicken breast 3/4 of the way through, add various different cheese to the middle and wrap in ham and bake.
Sprinkle with Parmesan before serving with Mayo.
