Default Jicama BLT

I love to use big slices of Jicama as the "bread" for a sandwich. I choose a very large jicama or two, peel, then slice about 1/4 in thick and store it in a covered container in the fridge. Then I use the slices as needed.

My favorite way is to do a BLT. Bacon, romaine lettuce, tomato, mayo between two slices. So delish!

I also spread peanut butter on a slice and eat. Or I'll do leftover roasted veggies with cheese sprinkled with an Italian style vinaigrette. Deli meat works too. You can do anything really. I haven't tried any hot "sandwich" fillings but maybe I will soon.

Oh! Great idea! Wrapping in lettuce is very messy. Your version sounds cleaner.

I saw a warm sandwich on tv last week: ham & cheese sandwiched between two slices of eggplant, breaded and baked:

I just tried this and it's pretty good. I was impressed at how well the sandwich held together. I thought the tomatoes would come squirting out the sides -- they didn't. The jicama adds a sweet element to the BLT that I didn't expect.

This is a brilliant idea but jicama and tomato are moderately carby. It'll have to be a sandwich for rare occasions. You could serve this to people who don't eat low carb, unlike the much messier lettuce-wrapped sandwiches.

Well they are both induction approved foundation "salad" veggies but yeah it would have to be factored into your overall carbs for the day. Also it depends on the thickness of the jicama slices and tomatoes. One sandwich is usually about 5 net carbs for me.

After looking up jicama on a few different sites I see that the carb count for it varies a lot. Maybe it's more feasible than I thought at first.

These are very addictive! I'm liking them more and more. I'm chopping up the bacon before cooking it so that it's easier to bite off. I'm also skipping the lettuce because the jicama provides plenty of crunch.

I tried a tuna sandwich on jicama; it didn't really work. The tuna oozed out the sides and was overwhelmed by the sweetness of the jicama.

I made Waldorf Salad with Jicama, walnuts, celery and whipping cream with fresh lemon, little salt and stevia sugar.
