Question How do I make califlower "rice" ?

Help!! I have the califlower, now how do I make the rice? And what about a sub for potatoes??? Thank you.

Cauliflower is such a great veggie and so useful for making low carb versions of former high carb dishes.

I make what we call faux rice by using the shredding disk in my food processor to shred the cauliflower, then I saute it in butter until is is tender but not mushy, about 8 minutes. It is so good with Chinese or Indian food!

Faux potato salad is cauliflower steamed until tender, cooled, then mixed with celery, green pepper, scallions, and any dressing you would have used in potato salad.

Faux mashed potatoes: steam the cauliflower florets until very tender, puree in food processor, add 3 T. sour cream, 1/2 cup shredded cheddar cheese, and 1/4 cup parmesan cheese toward the end, then puree until smooth.

Thanks Karla, can't wait to try them out. I knew about the "potato salad" but not the mashed. I have a vitamixer, so I will shred it like I do cabbage for slaw and see what I get.
