Default spaghetti squash hashbrowns

ok, was looking for something different and had some leftover cooked spaghetti squash...so.........here goes:

1/2 cup spaghetti squash
1 egg
1 oz of chedder cheese

mix thoroughly, and drop by tablespoonfuls into a hot skillet with melted butter. Should get three or so. Flatten slightly with your spatula.

Cook a few minutes until nice & brown...flip 'em over and brown the other side.

I served these like they were baked potatoes...a little green onion, 2 slices of crumbled bacon, a bit of sour cream.

Was pretty good!!!

Not really for induction though...good for OWL. As I served them, they are about 8.6 net carbs for the recipe with my toppings (4 for squash, 0.6 for egg, 1 for cheese, 1 for bacon, 1 for sour cream, 1 for onions & butter).

You could also serve them with some LC ketchup or salsa which would put the carb count down a bit. Could also be served with a poached egg or some fried ham OR the one I'm dying to try: smoked salmon & hollandaise.

Hmmm will try this weekend!!!

Sounds great - now if I could just figure out how to have any spaghetti squash left over

Actually this sounds good enough to actually bake one just to do this.

I do something close to this, but without the cheddar cheese and turn it into a potato pancake like dish. i add egg, garlic salt, pepper, and any other spices I want to use, then fry it in a patty shape.

I love to make this with my spagetti squash:

I take heavy cream, real parmesan cheese, garlic, butter, italian seasoning then cook low heat till it thickens (the cheese is melted)

Then I add little pepperoni slices (the tiny ones in the bags) and some red pepper flakes and pour over the squash - it's soooo good kinda like alfredo

But yes spagetti squash is rather high in carbs - darn

I will have to give your idea a try!

for those who want something similar but with even fewer carbs, try shredded zucchini or yellow summer squash- just drain it really well!

ladybelle - i like the cheese in it because without it, the patties taste too eggy for me, and I do get sick of eggs for brekkie- i originally came up with this to get away from the standard egg for breakfast. with sharp cheddar, it gets really crusty on the outside and less egg-like despite there is egg in it to hold together.

WOW!!! I'm impressed! I just tried them this morning and I am SOOO Happy!!! I love hashbrowns and this really hit the spot! I salted it and peppered it with some LC Ketchup and it was perfect

Thanks again for posting this - now I'm off to get more spagetti squash

You're welcome! Spaghetti squash actually makes nice 'noodles' in homemade chicken soup too
