Default McCormick Three Cheese Chicken

McCormick Three Cheese Chicken

3 boneless breast halves (boiled 15-20mins)
1/2 c chopped onions (sauteed in olive oil)
1 pkt McCormick three cheese sauce mix
1/2 c heavy cream (for cheese sauce)
3/4 c water (for cheese sauce)
1 c crushed pork rinds
1 t Italian Seasoning
1 t onion powder
salt and pepper

While chicken is boiling, sautee onions and then make cheese sauce using heavy cream instead of milk, sauce packet says add 1 1/4 c milk, use the 1/2 c heavy cream and then add 3/4 c water. Add sauteed onions to cheese sauce. Put aside.
Add Italian seasoning, salt, pepper, and onion powder to crushed pork rinds. When chicken is done, cut up into cubes and add to cheese sauce. Pour cheese and chicken sauce into small baking pan. Put crushed pork rinds on top. Bake for about 20 mins, or pork rind topping gets brown and crispy.

The whole pan has about 15 carbs....makes about 2 servings.
