Default Spinach saute

Just threw this together last night. Put some olive oil in a large saute pan over medium heat and then threw in about a half teaspoon of chopped shallots, half teaspoon of minced garlic, 2 tablespoons of chopped onion and 3 strips of leftover bacon. Left that in for about a minute and then added 2 bags of pre-washed spinach. Turned the heat down to low and covered it for about 5 minutes until the spinach cooked down. Took off the cover and turned up the heat to cook off the liquid extruded by the spinach and stirred it all around to mix well. Added a little salt and pepper, one final stir and viola. Easy and delicious.

I used to make spinach similar to this to put over grilled chicken sandwiches. I add about a handful of monterey jack shredded cheese to the spinach after the liquid is gone and let it melt.

I still put if over the chicken, but obviously without the bread now. Delicious.
