Vegetable Napoleons - pretty much stacked roasted veggies with ricotta and mozzarella, really good! You can add shrimp or proscuitto but I didn't have any.

Today's rm dinner will be: sugar-free Italian sausage, trader joe's cauliflower gnocchi, Keto for Life recipe for parmesan meatballs and alfredo sauce. I can't wait!!

Another dinner of Vegetable Napoleons, this time just eaten cold like leftover pizza - they were really good that way, I think even better than when they were hot out of the oven.

A new favorite. I have it for breakfast sometimes, too: Four ounces of roasted pork loin with an ounce of pecans. The macros balance out nicely for the meal and it's a delicious, filling combination. Last night I had it with salted and buttered Brussels sprouts.

Chicken, bacon, pesto pizza. Yum.
Crust was a version of wheat belly focaccia. I cut each piece in half and slice it horizontally so I can get 8 slices from a batch of the recipe.
Toppings: pesto, chicken, bacon, full fat mozzarella, olive tapenade (trader joe's) and a sprinkle of parm.
One 5X5 inch piece is very filling and so good that I've had it for three nights in a row.

Turkey burger (no bun) on lettuce with tomato slice, couple red onion slices, with slice of cheddar melted atop, and a small side salad (no croutons) with blue cheese dressing on the side (had less than 1/2 of this tiny amount).

It was good, Pat!

Tonight in honor of Cinco de Mayo made shredded chicken Nachos with pork rinds instead of chips, no beans. Made them in the toaster oven.

Peeled jumbo shrimp tossed in TexMex seasoning, sautéed in coconut oil .. topped a chunky salad of avocado, tomato, vidalia onion, cilantro and fresh lime juice.

Lime Mock Danish for dessert .. well-chilled it's quite dense, like a flan

That sounds so good. I think I might be bored with my favorite salad, trying to get back in the salad for dinner (I eat late) habit. And believe it or not, I've never tried the Mock Danish, thank you for the recipe.
