Default Cauliflower and Ham Casserole

I found this in one of my aunts old cookbooks. It really sounds good so I thought I would share.

Baked Cauliflower And Ham

1 medium cauliflower (separate into individual flowerettes)
1 1/2 to 2 C. Ham, chopped fine
2 or 3 egg yolks
1/2 pint sour cream
Parmesan cheese (1/4 to 1/2 c. fresh grated)

Cook cauliflower in boiling salted water until tender.
Take out of water carefully and let drain in strainer.
Butter a casserole dish and put in it a layer of cauliflower
and then a layer of the very finely chopped ham. Alternate
layers, one on top to be cauliflower. Beat the egg yolks, add
1/2 pint sour cream and pour over cauliflower mixture. Sprinkle
parmesan cheese over top and bake until brown.

Serves 6

Cauliflower has 5.2 Grams carbohydrate and 2.5 g. fiber per cup.
Eggs add about 2 carbs
Sour cream is 4.91 g carbs per 1/2 c.
1/4 C. hard parmesan cheese is .04 g carbs

This carb count is according to fitday.
