Oh, oh, oh....
I converted one of my Mom's old cookie recipes today. We called them 'Poor Man's Cookies.' They are basically a spice bar cookie.
Man. I outdid myself. They taste exactly like the real thing. Here it is, if you'd like to try them.
Poor Man's Cookies
1 cup hot water
1/4 cup raisins
Let above soak for 30 minutes, then whiz in the blender.
Add pureed raisins to:
1/2 cup shortening or oil (I used canola)
After whisking above together, then add:
1.5 cups carbalose flour
1/4 cup almond flour
1/8 cup resistant wheat starch
1/8 cup wheat protein isolate
1 cup pourable splenda (or alt. sweetener equivalent)
1 tsp. ground cinnamon
1 tsp. ground cloves
1/2 tsp. ground allspice
1 tsp. baking soda
1/2 tsp. salt
Then whisk in:
1 egg
Batter should be wet. If it seems stiff, add 1-2 tbls. water.
Grease and flour (with wheat protein isolate) a cookie sheet with sides.
Spread batter on cookie sheet.
Bake at 350F for 20 minutes.
After completely cooled, frost with:
Vanilla Icing
Whisk together:
4 oz. softened cream cheese
2 tbls. butter
2 tbls. heavy cream
2 tsp. vanilla extract
6 packets of splenda or alt. sweetner equivalent.
24 bars. With icing, 4.3 carbs and 111 calories. It's a little high carb, but OH...to get to taste the 'past.' YUM!
