Great!

I need to try that pesto. It's not only different because of the mac nuts, it also uses parsley and oregano in addition to the basil.

I should make some chicken salad too. I've rarely made a really good one but I bought one of Mike Eades' sous vide appliances a couple years ago and chicken breasts are better now than they've ever been.

Hmm. Pesto chicken salad.

I'd add the Peanut Butter Cup recipe too.

I skip the Tbsp of cream altogether, don't lose anything not having it in there, and I guess if you have a problem with butter being insulinogenic, could sub in coconut oil instead?

I also don't use Spenda so as to eliminate any maltodextrin type thing in there, just use few drops of Sweetzfree, and you come out with a nice hugely fat lil choccy/peanut butter treat

I divide the whole recipe into 6 muffin sized cups and came out with this for 1 PB Cup when I put it in FitDay:

Cal.....173.3
Fat.......32.8grams
Carb-Fibre..2.0-0.8=1.2 grams (some fibre in the chocolate and the peanut butter I reckon)
Protein......1.3 grams

To be honest, I use a bit of butter and cream here and there. I just try to minimize it as much as possible.

I found this on the website for the James Beard Foundation:

Heirloom Tomatoes with Almond Hummus and Basil Oil

The hummus is really unusual -- it's made from almonds, olive oil, garlic, lemon, s&p. I think the instructions inadvertently skip a step -- the almonds are soaked but it never says to slip them out of their skins, which must be intended, given the photo and considering what almonds look like after soaking overnight.

A couple more:

avocado slices wrapped with roasted, seasoned seaweed - optionally add pickled ginger

I made sort of a coconut-chocolate pudding that was tasty:

15 gm dried, unsweetened coconut
1 Tablespoon unsweetened cocoa powder
zero-calorie sweetener equivalent to 1-2 teaspoons sugar
2 Tablespoons unsweetened coconut milk

Stir together the dry ingredients, then stir in the wet.

vanilla shake

freeze coconut milk (the kind in a can, not the milk replacement stuff in carton) in ice cube tray

blend:
coconut cubes- i use 1/2 tray for a great big smoothie!
about 1/2c-3/4 c almond or coconut milk (the kind in carton meant to be milk replacement)
truvia to taste
vanilla extract

options: add cinnamon, cocoa powder or different flavor extract like raspberry, banana, or orange
