Does the same thing happen when you eat other dairy products? If so, you may be lactose intolerant to some degree. People that cannot eat cow's milk products can often eat goat and sheep cheese, milk and yogurt. There's also soy cheese.
If not, you could be very sensitive to sodium. Maybe portion control might be the answer?
Just thought of something...are you eating REAL cheese or processed cheese?
