Default Creamed Spinach with Garam Masala

I a just wondering if this is an OK recipe to make ahead about an hour or 2. My folks are on a low-carb diet (I am not) and they want us to only bring low-carb dishes for Thanksgiving.

For making ahead, use half cream cheese and half cream - add the cream cheese after the cream has reduced. It will get a little runny with sitting and the cream cheese will help to prevent that.

Mmmm, this is outstanding! I used some cream cheese, since I only had half and half, no whipping cream. The garam masala was a nice touch.

Speaking of Spinach.......
I buy those boxes of frozen spinach. The carb count is 2 per serving, with 2 grams of fiber. So......I'm assuming there are ZERO net carbs.

BUT, when ever I look in books and different websites there is always something different and I get totally confused. Should I just not worry about carb count since it is spinach and spinach is so good for you anyway?

Spinach is very low in carbs and a great vegetable. I eat lots of it myself.

Here is the nutrtional information on a 10 oz. box of frozen spinach.

That is completely different than what is on the boxes that I purchase.

I have a carb count of 2 and a fiber count of 2......
That's why I'm confused, everything says something different!

Some manufacturers pre-subtract the fiber from the carb count because there is no standard. They're not being sneaky, it's just the way they do it.

So I would say that the carb count on your spinach is 4 grams and becomes 2 after subtracting the fiber which is about right for spinach.

If something that is not muscle meat or fat states 0 carbs after subtracting fiber, it's most likely that the fiber has been pre-subtracted!
