a.k.a. Spinache with yogurt
I absolutely love this with chicken, prefereably grilled chicken pieces. You can dip the chicken in the yogurt mixture and it is just soooo tasty!!
What you need:
About 3 shalots
about 500 g of plain yogurt (yesterday I used greek yogurt, so it was a bit too thick)
about 4 cubes of frozen spinache (or fresh)
cut the shalots in thin slices and fry them until golden in some oil (I use garlic oil)
take them out of the pan.
Wash the frying pan
Fry the spinache (defrosted) in some garlic oil until nice and tender. Put the spinache on a big wooden board and use two forks to shred it into smaller pieces.
Wait for the shalots and spinache to cool down.
Once they are cool, mix them up well with the yogurt and chill in the fridge for at least 5 hours or so.
(I normally do this a day in advance, or if I am cooking spinache for a different meal, I just fry a bit extra and add it to the yogurt for the next day)
Take out the fridge and eat ;-)
In case you are thinking this is a really weird dish, so do most of my friends, but once I manage to make them eat it, all - bar one - loved it.
