Default Braised Celery

1 bunch celery, cleaned and cut into 4 inch pieces
2 Tbsp. chopped garlic
1/4 teaspoon pepper
4 tablespoons butter or margarine
I cup low sodium chicken broth
1 tablespoon minced fresh parsley


Arrange the celery w/ garlic in a single layer on the bottom of a large skillet. Season pepper. Dot with butter. Add chicken broth and pour over the celery.
Cover pan, and bring to a boil over medium-high heat. Reduce heat to low, and simmer for 30 minutes. Sprinkle with parsley before serving.


Celery is great for people w/ high blood pressure too! Your seasonings and herbs are flexible as well.

This seems like such an old fashioned dish. I think I remember seeing cooked celery recipes in old cook books when I was a kid.

and the butter in the dish just makes it taste rich. I just remembered this dish now that I am starting to LC, and I am making it tonight!
