Ok I just made these turnip latkes and they were pretty damn good. I hardly measure anything as I'm sure a couple of you know so these are just rough estimates.

2 medium turnips
2 medium eggs
1/2 medium onion
salt
pepper
garlic powder
1-3 tbsp whole wheat flour (optional)
1 tsp corn starch (optional)

Grate the turnips and then soak them in cold water for a few mins. Drain them and place them on paper towels or a kitchen towel to squeeze out water. Put them in a bowl and grate the onion over them. Season with s, p, and gp. Crack 2 medium eggs in the bowl. Add the wheat flour and corn starch (optional) and mix to combine. Heat oil in a nonstick pan and drop them in. About 2 tbsp worth and try to make them pretty thin but not so thin they break. Cook thoroughly and serve immediately. Top with sour cream if you like. If you want to serve them later transfer them to a baking sheet and then just pop them in a hot oven when ready to serve.

How interesting! I made up a mix very much like this using grated zucchini the other day and cooked them up on the BBQ along with the steaks. Instead of flour and starch I used a little bit of protein powder to help them bind. I just made up the recipe as I went but this is so similar it's kinda freaky!

Next time I'll try turnips! Thanks astro!

Good luck with them!! They weren't too bad at all. I know one of the major probs with turnips substituting for potatoes is that they just dont get crispy. But with latkes they dont NEED to be crispy like fries do! But it still satisfies that fried potato thing, ya know?

How did the protein powder work for you? I just choose the wheat flour cause the bake mix is pretty yucky, LoL. Plus to help them get alil crispy I added the corn starch. Maybe next time I will just add 1 tbsp of corn starch and 1 tbsp of wheat flour instead of the 3-4 that I added.

The grated zucchini doesn't sound too bad, how did they crisp up? Another person on here made them with spinach & cheddar.

I also made something like these with the grated zuccinni. I did not use flour or cornstarch I used some grated parmasean cheese in mine. They were very tasty and my dh and son really enjoyed them.
