Candice’s Low Carb Vanilla Bean Pots De Creme(Crème Brulée with out the burned top)
Just as good as a full carb Crème Brulée only you don’t get the burned sugar on top
As much as I used to love that, I don’t really miss being I am actually able to eat nice rich Crème Brulée! Yum Yum Yum!

Makes 4 servings
Ingredients:
2 cups half and half(or you can use heavy or light cream)*
1/4 cup + 3 Tablespoons granulated Splenda
1 whole vanilla bean, scrapped
5 egg yolks
Instructions:
Preheat oven to 325F
In small heavy bottom pot combine cream, 1/4 cup Splenda, and vanilla bean(add all the inside scrapping as well at the bean it’s self to pot)
Heat on med/high heat until almost simmering.
Remove from heat and let slightly cool.
In a large mixing bowl, whisk egg yolks and 3 Tablespoons Splenda until pale and thick by hand. Takes less then a minute.
Slowly add hot cream mixture to egg yolks. I add about 1/2 cup slowly to temper the mixture, whisking quickly. Then add the rest still quickly whisking.
Strain though fine mesh strainer then divide mixture between 4 - 6oz ramekins.
Place in a water bath and bake at 325F for 30-35 minutes. (I use a 13”x9” to fit all 4 and use hot/boiling water for water bath)
Cool to room temperature in pan before placing in refrigerator to finish cooling. Serve completely cold.
*I use half and half because I watch my calories in maintenance. If you don't mind all the calories in heavy cream, use it.
