Grilled Pico De Gallo
Ingredients
4 tomatoes, 1 large red onion, and 1 jalapeno (large slices, so they don't fall into the coals) put on the grill and grill until black marks all over the veggies.
2 tablespoon fresh lime juice
1/4 cup fresh cilantro, chopped
salt to taste
Take the veggies that have been grilled (don't overcook to make mushy) and tender and cut in small pieces. Add the rest of the ingredients and mix. Let meld for a couple of hours before using.
Will keep indefinitely in fridge.
