The Ketogenic Bible: The Authoritative Guide to Ketosis, Jacob Wilson, Ryan Lowery (2017) also mentions the U curve - increased heart disease risk with very low and very high salt intake, with current guidelines falling in the very low category - which no one achieves. China falls in the very high - due to soy foods (soy sauce) iirc.

Yeah. My body thinks poutine sounds like a great idea.

But it also thinks buttered pork rinds are a good idea, and I do a lot better on those. We've come to an accommodation.

But--on a serious note,

Sorry to be the one to tell you, a body getting fat is a preservation action, too. In the land of plenty ( of junk food) it gets too much of a (not) good thing, and goes wonky. The body does what it knows to do--the bottom line is how we feed and nurture it.
