Post simple cauliflower mash

my whole family was having salmon and mashed potatos for dinner and i thought what could I do to make side that tastes/looks likes mashed potatos. then i remembered in the atkins cookbook there was a recipe for cauliflower mashed potatos but it was a lot more carbs and i didn't want to risk anything. I ended up needing only 2 ingrediants, and thats if you don't want any butter.

serves 1 person:

4-6 medium heads of cauliflower
light cream

1. steam cauliflower in a pot
2. put steamed cauliflower into a blender
3. add cream to your liking
4. blend from least power to highest power until mashed into tiny bits (it won't come out completely mashed, but it works)

its pretty good to and creamy if you make it right. add some butter if you'd like
