Thanks very informative! I've been having problems with 0 carb products and my digestive tract. I really think the ones that are much sweeter than sugar are the ones that ruin our sense of the natural sweetness of real food.

Also did not know how maltitol was made.

I got along with monk fruit, but it's half a packet in a big glass of lemonade.

The idea being that the sugar molecule is too large to be digested. But that can upset the intestines.

Agree, Uberfat. If you must eat sweets, use a non-caloric sweetener. I wish stevia didn't taste so weird.

My taste buds must be broken. Stevia tastes good to me.

Try different brands of stevia and different amounts until you find a brand and amount that works. And start with an amount that is the equivalent of half the sugar in a recipe.

Here in Canada I tried a few other brands before settling on Herbal Select stevia in drops for small amounts, like 5 drops in a pot of black tea (6 drops starts tasting bitter). Herbal Select stevia powder is too hard to use in tiny amounts, but I mix up my own version of "Truvia" (stevia powder + erythritol) since I don't like Truvia's burnt sugar taste.

Stevia tastes good to me too. The article says that using sweeteners just sets up a craving for more sweets, but for me, the fact that I very much prefer stevia to sugar/honey/corn syrup/etc means I'm not going to be craving a snickers.

My own tastebuds have become so sensitive I “taste the sweet” in stuff like carrots or certain cheeses. I can have one or two squares of 72% chocolate or some frozen raspberries as a tiny treat without wanting to eat the whole bar or bag.

I think the distinction is in how much and how often. If we are trying to substitute our way into eating the way we used to, with constant lowcarb treats or those candy/protein bars, we may dodge some carbs, but we won’t get maximum results.

Tiny bits of chocolate don't really work for me. I'll want the whole bar if it's sugar-free baker's chocolate. But I can sweeten the heck out of a couple of ounces of heavy cream and be perfectly happy to stop there.

I think a lot of this may come down to habituation and conditioned responses, that might explain the large variation in responses.

Splenda is pretty much the only thing I have tried that doesn't taste weird to me. I know people think it's horrible, but I've gotten rid of so many other bad for me things, that I'm okay with using it occasionally, mainly in baking. I also have a bottle of liquid sucralose, but I find it hard to use, because it is soooo intense.

They're fine for maintenance for me, but I'm one who hasn't been able to have artificial sweeteners while in weight loss mode.
