Default Bowl n' Spoon Salad

Also known as 'lunch in a bowl.' This is the salad for people who hate salad! I love it as a delicious, satisfying lunch or side dish. It's nice and refreshing on hot days when you can't fathom cooking. Induction friendly!

1 hard boiled egg
1/2 avocado
1/2 small tomato
2 large button mushrooms
a few Tbsp onion sprouts
1 oz cheddar cheese
1 oz harvarti cheese
1 tbsp ranch dressing

Dice the egg, vegetables, and cheese. Combine all ingredients. Enjoy! Serves one as lunch, two as a side dish.

The numbers: 502 calories, 42 g fat, 21 g protein, 12 g total carbs including 5 g fiber.

Obviously, you could make many, many different variations on this. Try one with raw zucchini, sweet peppers, Greek dressing and feta cheese. Use mozzarella, Italian dressing, and throw in some pepperoni.

I absolutely love onion sprouts, but you could substitute green or plain onion. The sprouts are great because they have that nice onion flavour without the carb count or the overpowering flavour of regular raw onion.

Just wanted to thank you! I tried a variation of this today, and I loved it!!! (although i guess i put in a bit too much onion... heh.)
