Wink Low carb French crepes

These could be cool for breakfast or as an afternoon snack on a cold November afternoon.

I adapted these from family recipe for crepes. I’ve calculated the carbs as 3,8 for the crepes and 1 carb for jam.

1 egg
30 g protein powder
20 g melted butter
1 dl soymilk
grated lemon zest
vanilla essence

butter for frying

Melt butter.
Grate lemon zest into protein powder add splash of vanilla. Slowly pour in soymilk as you stir to avoid lumps.
Add egg and wisp – when butter has cooled slightly wisp in.
Let sit for 20 minutes and then fry in hot butter on medium sized pan. Makes 3-4 crepes.

Serve with sugar free jam

I posted a crepe recipe myself, and I used half and half and flaxseed meal. I tried adding a little soy protein powder, and it worked fine. Don't know taht there was much of a difference though, maybe it made them a little lower in carbs but flaxseed meal isn't too bad by itself. And flaxseed meal gives it a bit more of a "whole grain" look and texture.
