Toad in the Hole Atkins Style

Today I made sausage and egg with a take on the English dish 'toad in the hole'
I used a sausage called boerewors but any long sausage that coils into a spiral would do.
Place the sausage in a baking tin large enough to allow it to spread out, place on a medium oven. Sauté some onions until a little softened then place in roasting tin with sausage.
Beat eggs together with cream (I used eight eggs and about 4 tablespoons of cream).
When sausage is half cooked pour egg mixture all around the sausage.
Lower the oven temperature and bake until puffed and brown.
This is great hot but sliced up makes a great cold dish for breakfast and lunch.
Carb count would depend on the sausage used but is very low.
