Default Stacie's Blueberry Cheesecake Muffins

I combined and tweaked several recipes to make my own. The (non-LC) hubs loves them! (Note: i plug my ingredients into a calorie counter to get the nutritional information).

*Blueberry Cheesecake Muffins

3/4 cup almond flour (ecc: 9)
3/4 cup vanilla protein powder (ecc: 5)
1/8 tsp + 6 drops of the 0.5oz bottle of EZSWEETZ (ecc: 0)
1 tsp Baking powder (ecc: 0)
1 pinch Salt (ecc: 0)
4 oz Cream cheese softened (ecc: 4)
1 teaspoon lemon juice (ecc: 0)
1 teaspoon vanilla extract (ecc: 0.5)
2 Jumbo eggs (ecc: 1.2)
1/2 cup heavy cream (ecc: 0)
3/4 cup blueberries (ecc: 8.5)

Mix all ingredients and then fold in blueberries
Fill each muffin cup about 3/4 full
Bake 20 minutes ~ 350.

Total Carbs (12 muffins): 28.2g
Total Per Serving: 2.35g

These sound good. Thanks for sharing.

I had to smile when I read your first two ingredients though.
1/2 c. +4T = 3/4 cup and is much easier to type. Just thought I'd mention the equivalence to make your recipe posts easier.

Did the same thing myself on my website one time. Caught it months later. Been there; done that.
