Haven't had a pancake in months but decided I would try one this morning. Delicious and now I am wondering why I quit making them. Next trip to the city I will get some almond meal and try it in my pancakes.

Wow! Guys don't usually use words like "Yummy" so I'll say this was very tasty. I'm still a little sceptical about recipes that sound different, but I ate sourdough pancakes every saturday for decades and miss them. These things taste a little like buckwheat and I loved it. I'll have to make a larger batch next time. I topped with fresh strawberries and whipped cream. They were... uh....yummy.

I love this recipe too! Definitely time to make this one again. And love your addition of the strawberries and whipped cream-YUM!

Just wanted to bump this for how awesome it is! I made a variant with almond meal instead of flax (I haven't found that here yet) and baking powder as some had suggested, and it was soooo good! I topped it with sugar-free blueberry jam and home-made whipped cream:

My latest was 1Tbsp flax meal + 1Tbsp almond meal. I kept one egg and the same proportions of other ingredients but added about 1Tbsp table cream to thin and add 1/2 tsp vanilla. This melows the flax a bit and makes a full size cake. I added thawed frozen blueberries this AM. I've somehow adopted this cake as a daily regimen. Are any of these ingredients clinically addictive??

I just made the original recipe pancake with just flax meal, but tomorrow I'll try your verson. I have to say I was pleasantly surprised how much I enjoyed it. Normally I don't like the flax texture, but I have a bag in the fridge to use up before it expires and thought I'd give this recipe a try. Didn't want eggs again today. Glad I did.
