Default Cauliflower Poppers

These are a great snack -- very good with low carb beer during football.

Preheat oven to 500 degrees

1 med head cauliflower (about 20 oz after cleaning)
1Tbls cumin seeds
1/4 tsp or more cayenne pepper
1/2 tsp garam masala (found in the spice section)
1/4 tsp salt
1/8 tsp turmeric
1 - 2 Tbls oil

Cut cauliflower into bite-sized individual flowerettes. Cut stems into similarly sized pieces. Put the spices into a coffee gringer and grind into powder. Line a broiling pan or similar dish with foil, add oil. Add flowerettes and toss to coat in oil. Sprinkle spice over all and toss to coat.

Cook 30 minutes, stirring every 10 minutes. Cauliflower should have lots of browned bits. Good hot or at room temp.

Makes 2 large or 4 reasonable servings -- 2 if you are munching through a game.

Per whole recipe (with 2Tbls oil):

430 cals
34g carbs
15g fiber
19g net carbs
31g fat
13g protein

With 1 Tbls oil
Decrease cals to 310
decrease fat to 18g

These can actually be made with very little fat -- about a teaspoon will suffice -- to make them South Beach friendly.

wow

i just made this with a bag of frozen flowerets....drizzled evoo on them, garlic powder, salt, crushed red pepper flakes....baked as listed
