Default Cheddar Cheese Biscuits

Ingredients: 1 1/2 cups Atkins Country White Bread Mix 2/3 cup Water 1/2 cup (2 ounces) Shredded Cheddar Cheese 10 Tbsp Soft Baking Butter 3 tsp Baking Powder 2 tsp Splenda (2 tsp = 1 packet) Directions: 1) Place ingredients in Bread Machine (water, butter, cheese, bread mix, baking powder, splenda is the order I used) 2) Set Bread Machine of Dough Cycle. Let run for about 20 minutes. 3) Remove dough and place in Doughnut Pan [without a center hole.] 4) Bake at 375 degrees for 12-15 minutes. Yields: 10 Biscuit Halves (5 Biscuits) Calories: 374 Fat: 26g (65%) SFA: 12g (31%) PUFA: 2g ( 5%) MUFA: 10g (25%) Carbs: 15.6g ( 7%) Fiber: 9.0g Protein: 24g (27%) Vitamin A: 16.0% Riboflavin: 3.2% Vitamin B12: 3.8% Iron: 3.8% Zinc: 2.4% Selenium: 2.2% Calcium: 24.4% Phosphorous: 17.0% Magnesium: 1.0% Sodium: 785.7mg Potassium: 11.7mg*


My batch came out pretty well (I used half the amounts listed)...Simply remove the Biscuit halves from the pan and place them together with whatever you want between them. Cheese works well.

*True Potassium content would likely be higher. Since Atkins Bread mix does not list its Potassium content on the label...I entered it as 0mg in Fitday. Any Vitamin not listed is <1%DV.

I adapted and combined a few Hi-Carb recipes.
