This definitely may not be the case with your daughter, but I was lactose intolerant until I went Atkins/Keto and pretty much gave up wheat.
I was so intolerant, I carried around charcoal capsules, just in case something I ate was made with milk or cheese.
After I went Atkins, I ate some cheese, fully expecting to down some charcoal at the first signs of lower abdominal cramps. They never happened, and I've happily put cream in my coffee and enjoyed cheese ever since.

Vegans miss meat. That's why they love subs, put real sandwich names up on their deli menus, talk up their new fave on their channels, and get tired of it and start all over again.

I still eat some substitute foods. Arnold makes a Keto bread that is good every once in a while, and I get a pea protein pasta from the Great Low Carb Bread company. I think in moderation, they are OK for myself and my wife.
I have nothing against vegans and what they eat, as long as they don't try to make me eat their way. Please don't preach, and I won't tell you about the 7 nutrients you can't get and about my omnivorous digestive tract.
I'm pretty sick of this whole plant-based propaganda, only because it isn't better for the environment. It's been proven that the fertilizer industry puts 100 times more methane into the atmosphere than all the cow burps and farts. Of course they feed (and shouldn't) the cows corn before the slaughter them, just to fatten them up. So I eat 100% grass-fed and finished beef.
There is no singular right way to eat. I found what works for me.
