I have a hard time thinking of chicken or beef as "just" foods because they're so versatile ... especially chicken.
Grill it, bake it, make nuggets or strips out of it, marinate it, fry it, broil it. You can use so many seasonings and dressings with it that it won't taste the same twice. Make "wraps" using a lettuce leaf and fill it with grilled chix, cheese, olives, a bit of tomato and whatever else your carb count will allow.
We like to keep a container of cooked ground beef in the 'fridge and season it according to our mood for either taco salad, an extra topping on a green salad, or a lettuce leaf burrito.
Make a taco shell out of microwaved cheese (place a half oz. to one oz. on a plate, microwave at your discretion, since all 'waves are different, until melted, allow to cool and wrap around fillings of your choice.
We do lots of tuna and chicken salad, egg salad, deviled eggs, cole slaw (I make a low carb dressing), and also try to make enough dinner leftovers for the purpose of reaheating at lunch time.
I find that I don't get in as big a rut with LC as I did when we were carb-packers. We sandwiched ourselves silly at lunch time ... chips and potato salad on the side many days.
Oh! I also make smoothies, of which you'll find many recipes under "Breakfast". Sometimes, I make extra at breakfast time and just refrigerate a portion, then shake it up for lunch. Filling and more a treat than a meal, depending on the recipe.
