Default Stuffed Zucchini - Baked

Recipe Name:STUFFED ZUCCHINI - BAKED
Category: SIDE
Serves: 6

SOURCE: ADAPTED FROM WW RECIPE

3 Medium Zucchini
1/2 Cup Ricotta cheese
1/3 Cup Parmesan cheese
1/3 Cup Pork rinds, crushed
2 Tblsp Basil
1 Tsp. Lemon zest, grated
1/2 Tsp. Pepper, black

Have Handy:
bowl of ice water
nonstick spray

Preheat oven to 400 degrees.

cover baking sheet with foil and spray with nonstick spray. Bring a large pot of water to boil.

Trim zucchini ends and halve them lengthwise. Boil them until they begin to turn clear at the edges (2 minutes). Dip entirely into ice water to stop them from cooking; let cool completely and pat dry with paper towels.

Scoop out pulp, leaving a 1/3 in thick shell. Coarsely chop the pulp and put into a medium sized bowl.

Add ricotta, parmesan, pork rinds, herbs and spices; blend well. Stuff the mixture back into each zuke half. Spray with nonstick spray and bake until lightly browned (about 20-30 mins). Let cool a bit before serving.
