Default lemon creamsicle cake

I used to bake this lemon creamsicle cake where I would bake a plain sheet cake and poke holes in it, the mix gelatin and 1c of hot water and spoon it over the holes and then I would whip cream with lemon pudding and spread it over the cake and into the holes.

My friend has begged me to make this cake for a party over the weekend and to try and make it low carb.

I am not exactly sure how to make a plain low carb sheet cake and what quantities I should use to fit a 13x9.

I suppose 2 cups of almond flour 4 eggs and maybe some almond oil or butter and a tsp of baking powder. Would that work?

Also how can I make a low carb lemon pudding? all the sugar free puddings I see have aspratame in it and are high in carbs too.

Either of these two cakes from the Low Carb Luxury website are good.

Almond Flour Pound Cake Italian Sponge Cake

The pound cake is better when made with the cream/cheese butter combination as outlined in the recipe. The coconut pudding from the same site is a good base to start with for building your own lemon pudding. Coconut Cream Pudding. You can add lemon juice, extract and grated lemon rind.
