Default Low-carb Doritos



Zucchini Doritos-style chips


1 large zucchini, shredded
2 eggs
2 cups cheese


Preheat oven to 450 degrees F.

Grease 2 cookie sheets.

Cut ends from zucchini. Shred. Mix with egg and cheese. Make 6-8” circles on greased cookie sheet(s). Bake at 450 degrees for 12 minutes. Loosen and flip the circles. Bake for another 5 minutes at 450 degrees.

With a pizza cutter, cut rounds into triangles (about 6 per round).

Let cool on a rack for 6-8 hours in a cool oven. To store, keep loosely in a bag or a plastic container in the refrigerator or on the counter. Best used within a week of preparation.
After chips have dried substantially, in a plastic container toss with popcorn seasoning for desired flavor.

Makes 36 chips.

They are the bomb, diggetyboo. There are so many flavors of popcorn seasoning to try with these, and I've been giving many of them a shot. Barbecue, nacho, cinnamon apple, sour cream and onion, nacho cheese, white cheddar--it's so much fun! And the zucchini takes all of the flavors fabulously.

The main thing is to give the chips a day or two to utterly dry out prior to tossing with the popcorn seasoning. A little seasoning goes a long way and then only adheres enough, without being clumpy.

I think I going to try these (I do like pork rinds as a chip substitute but always good to have a change!)...
Might have to try some other seasonings though because most of the popcorn seasonings I have seen have gluten which I can't have.

The popcorn seasonings are at local stores, but you can buy them online.

For gluten-intolerant folks, definitely look for organic popcorn seasonings and for cheddar cheese powder. You won't be disappointed!

oh wow that DOES look SOOOOOO good. I live in a small town so cant get groceries till tomorrow (none of that 24 hour shopping for us!!) but I plan to be the first one into the grocery store tomorrow, oooh I HOPE they have zucchini! Thanks!!!

Zukes are hit and miss right now. Some of my stores have them, and some don't. Worst-case, try the cauliflower version, and use cheese flavors. Cauliflowers and cheeses go very well together.

Luke-- if you find the cheddar, let me know. I did my searching online, but would like to look at Vitamin Cottage and see what they carry.

I've seen cheese substitute made with hemp, and rice protien. Don't remember the brands though.

I am told by friends who use no cheese products that soy cheese worked fine in this recipe.

Wow!

Who would of thought popcorn seasonings could make me so happy!

I purchased my first one today at Walmart. I was looking for Nacho Cheddar, but none to be found. They did have Ranch so I got that one.

I was so excited to try it, I couldn't wait for the Zucchini chips so I just nuked some Trader Joe's Organic white string cheese in the Microwave and then sprinkled with the Ranch seasonings. Taste like Lay''s Potato Chips.

Now I'm just gonna order the 12 pack variety popcorn seasonings from Amazon to add to my pantry.

I have 7 of th 12 and have been really happy with them. There is a small amount of sugar in the cinnamon apple flavor, so use that one sparingly and after induction.

Let me know your faves! My favorites are nacho and sour cream and onion.
