UK bacon is so different from USA bacon. I like them both. Unfortunately we can only get USA bacon here.

I read that if you eat nitrates and nitrites, you should take vitamin C with it.

The nitrates and nitrites they use to cure meat are the same as those found in celery and other veggies, but the veggies with the nitrites have enough vitamin C to buffer the oxidation damage.

True or not? I can't confirm as the source wasn't published in a peer-reviewed scientific journal. But I figure it certainly doesn't hurt to have a little extra Vitamin C in my system. Either it will help, or I'll have expensive urine.

Slight topic curve into hot dogs. Found uncured beef franks from Oscar Meyer. Label says no nitrates or nitrites added except from what is naturally occurring in cultured celery juice & sea salt. Very tasty - I like it better than regular hot dogs - & price isn't bad.
