Default Kale "chips"

Just tried these for the first time, really good.

Wash kale and trim the fibrous stalks (this really makes a difference; I left some on and they didn't cook as well). Then coarsely chop into 2" to 3" pieces (depending on how big/small you want chips to be).

Toss the pieces to coat lightly with oil and a little sea salt. (I used 2 T of oil; less is better, if you use too much it gets too greasy).

Then spread kale pieces in one layer in a large baking pan. Toast in oven at 300 degrees and watch carefully. Stir several times during baking to crisp evenly. My batch took about 15 minutes. They should be done when very crispy and a deep green color; edges may be lightly browned.

This was so good, melt-in-your-mouth crispiness, and better than any other crunch LC snack I've tried so far! It would be great with a sprinkle of sesame seeds during last few minutes of toasting.

Are these brittle? or can you actually use them for dips/spreads?

Mine were flakey and easily crumbled; I don't think they'd work well with a sour cream-type dip. Though I've read that they're often served in Asian restaurants as an appetizer and I'd guess they use a soy sauce dip (e.g., soy sauce, ginger, a little vinegar or fish sauce) that would probably work well. I'm going to keep experimenting though, making another batch today! Do a search for "kale chips," there are a lot of posts and recipes online.

So they probably have the same consistancy of the dried seaweed they use for sushi.

If you buy a "bunch" of kale at the store, how many cups of chips would I expect to get?

These are sooo good - I make them all the time

A couple of years ago, I found this video on how to make them and it's stuck with me ever since.

Kale chips are excellent. I bought some kale yesterday since I haven't had them in a while. I cook them at a little higher temperature. I throw different spice mixtures on them. Yum. Not strong enough for dips but great by themselves.

Had a bunch of kale given to me today - looked on All Recipies.com and found a couple of recipies. Made 2 batches - one with olive oil and salt and the other with olive oil, salt and a bit of balsamic vinegar. The one with the vinegar was the best. After making these came to this forum and there they were.

variation with butter: didn't have olive oil, baked some kale with melted butter and it came out crispy and delicious! It was very curly kale so it really crisped up, don't know if it would work with Lacinato/dino kale.
