Does anyone happen to have the carb count per slice for this? Their site is down. Thanks!

Yes, the links on their website seem broken but there is a phone number listed you could call and ask

Ask about ingredients too so you can decide which phase of Atkins it would be 'legal' for.

Following on from this, I now have the carb counts. Not good for induction but acceptable later on. 14.8g per slice. A combination of pumpkin, linseed and sunflower seeds, combined with wheat bran and oat flakes.

Looks fine for the grains rung of OWL. However if one slice has nearly 15 net carbs it would be adding quite a lot of carbs per sandwich

I'd make some flax bread instead. I can get a decent sized bacon sandwich from the 'muffin in a minute' recipe (I spread it out into a large circle then cut in half to get a semi-circular sandwich) which has 8 grams of fibre plus 2 grams of carbohydrate!

I'm currently having fun with this recipe from an expert low carber friend.

1 pkt quick-rise yeast (as one would normally use in a breadmaker)
1 cup gluten
1/2 cup low-carb (Carbalose) flour
1/2 cup soy protein
2/3 cup ground flaxseed
1 - 1 1/2 tsp sugar (this is consumed by the yeast)
1 tbsp volume-equivalent sweetener
2 eggs
1 1/4 cups water

Put all the above ingredients into your breadmaker in the appropriate order (mine is yeast, then dry, then wet; others may differ). Set for dough, leave it to do its thing. When the dough is ready, divide into two loaves and bake for about 25 minutes in a hot oven (220C/gas 7).

Slices well, toasts well, keeps about five days, freezes fine.

I need to let it prove next time as I do not have a breadmaker, just did it all with a hand blender that has a dough hook. It's very nice even though I didn't prove it on the first attempt!
