Default Why are the evenings the worst?

I'm giving low carb eating another try, but am finding it incredibly difficult in the evening time. I did it successfully about a year ago, so I know I can do it and have seen the results. (A holiday threw me off).

As I say, the evenings are the worst for me. It's just ideas for dinner that I need. I used to have roast dinners without the potatoes before hand but I can't do that every night! I can't do pretend food. I've tried cauliflower mash and it was seriously bad! I need proper hearty food like the roasts, like meat casseroles etc as it'll also be a way of getting some veggies in.

I watched Nigel Slater doing a sausage and mustard casserole on the TV this morning and might give that a go, minus the pasta he put in it.

Any ideas? I've searched the forum for recipies, but it's so vast I'm getting a little lost. Also, a lot of them are American.

Just a suggestion, but how about getting yourself a copy of Neris and India's Idiot-Proof Diet Cookbook, which is both low carb and British! Another good one is A Passion for Protein by Atkins-convert and British chef, Henry Harris.

That should help to get you started

Hey, there's nothing wrong with American food!

It sounds like you might be looking for simple recipes?

If you like a lot of veggies, you could try something like Mark at "Mark's Daily Apple" suggests:

I'm not sure how you prefer to cook your food, but if you cook roasts then maybe you use an electric crock pot? You can throw chicken, chicken breasts, bratwurst, or anything you want in there.

Of course you can't get much more simple than a quick pan fried steak (I prefer beef), or hamburgers.

If you use much ground meat and you don't want hamburgers, get a good low carb "meat loaf" recipe. I like to just take hamburger, onion, and spinach - put into loaves and bake in the oven. You could top with low carb ketchup if so desired.

I use my crockpot a lot so I can just sling the meat/veg with seasonings and a little water or meat stock in the pot in the morning and return to find a moist and tasty chicken or a pork/beef/lamb casserole waiting for me.
It is a good way of making sure I have leftovers for snacks too.

I don't use any particular recipes for this, just whatever I have on hand but there are many slowcooker recipes around that can easily be made lowcarb by omitting flour/cornflour and the starchier veg if you are not up to the relevant OWL rung to use them.

You can use turnip and celeriac as well as daikon on induction, so you should not go short on the veggies.

I know what you mean concerning US recipes for UKers.

They aren't practical due to their mesuring system i.e. cups, tbs and sticks of butter. We don't get the same ingredients neither and it does make a big difference when it comes up to rustling up a quick tasty meal.

I find that one of the best books is Rose Elliot's - Vegetarian LC diet cookbook. I often just add either poultry, fish or seafood instead of the tofu in certain recipes. Her vegetable and dessert section is simply inspiring.

As for caulflower mash, it is a revelation but you do need a few hints when making it. I steam small florets in the MW. Whiz them up in a FP with a a little EVO (extra virgin olive oil) double cream( or soya cream) salt, pepper and grated nutmeg. A pure delight for substituting mashed potatoes !

How about boiling up some cauli & broccoli in the morning or at lunch then have that with something and save the rest until the eve and make yourself a nice omelette with cheese , bacon, mashed up cauli & broc in the egg mix , just had one for my brekkie and it was absolutely spot on.

Or a nice steak with broccoli and cauli and sprinkle the hot broc and cauli with grated cheese.

Or some 100% beef quarter pounders with an egg, broccolli and cauli and grated cheese, very nice!

Evenings are the hardest for me as well. When I have strayed from my plan, it's mostly been between 4pm and bed time. I think in my case it's because that's when my dh and I snack and watch tv. It's just a long standing habit we've had for many years, and it feels weird not to snack right along with him, so I give in to his carby snacks. Yes I can have LC snacks but mostly I am craving the carbs all the same once the light gets low.

It is the hardest time for me as well..its the only time i stray to higher carb choices, or fruit..ugh..its the snacking time is why.

I eat my one and only large meal in the evening. We evolved to eat in the evening, which is why no matter how much you eat during the day, you always want to eat in the evening.

If you are not at one meal a day, I would suggest putting off your first meal as long as possible, and keep moving it forward in time. Eventually, you can get to 2 meals a day, as later as you can. You will start to feel very alert and energetic by not eating during the day, which raises your insulin and makes you hungrier.

And you know you have a big, real meal, not a snack, for the evening.

I have a few sets of cups, spoons but still prefer metric system and use a scale.

I always want to nibble in the evenings too. So try a few nuts ( though hard to stop once you start), hardboiled eggs, ham and cheese, chicken wings
