Have a look at the Baking for paleo-deviants thread for ideas. Not all of it is coconut based. The pumpkin muffins might work, as well as almond flour cookies or muffins.
Can you tolerate clarified butter? You could use that in place of coconut oil for most recipes. Lard might work, depending on the recipe.
I bet you could get decent fat bombs if you used solid baking chocolate and either a firm nut butter, or lard. They'd still probably be softer than those made with coconut oil, but it should work.
All of my other ideas have either dairy or coconut. :P
The berry idea is nice - how about melting some chocolate to dip them in?
