Default How do I get sufficient fat?

I'm struggling to eat sufficient fat and i'm not sure how to overcome this other than drinking a cup of melted butter I don't eat red meat so can't take advantage of that fat content. I do eat chicken and seafood and now eat chicken thighs and don't trim the fat off like I used to. Can I use cheese to increase my fat content and what else can I eat. Adding a tspn of butter to my cooked food isn't quite enough. I rarely get the equation right.
Any suggestions?
