Default Chocolate Brownie VPB, Adventurous Cooks Needed

Hi Everyone,

I'm trying to come up with a breakfast protein bar that I could easily take with me. Some have been okay while others went to the trash after just a few bites. I could really use some input. I'm trying for something dense and preferably semi-moist that easily holds together. I would prefer to add veggie to it for added nutrition. I've included my Chocolate Brownie VPB to start the ball rolling, but would LOVE it is someone came up with another flavor.

Chocolate Brownie VPB (vegetable protein bar)
2 oz unsweetened chocolate (melted) (8)
2 T unsweetened cocoa (6)
2 eggs (2)
¼ c butter
4 oz cream cheese (4)
½ cup sugar subst.
½ c protein powder
2 T wheat bran (1)
2 T gluten powder (2)
1 c. grated zucchini (leave on skin) (.5)

Place grated zucchini in a blender with eggs. Blend until smooth. Add butter and cream cheese to medium bowl, beat until smooth, add melted chocolate, then cocoa, and zucchini. Mix well then add the rest of ingredients until a thick batter forms. Pour into a greased 8x8 pan and bake at 350 for 20 mins.

Makes 25 squares and .78 carbs (more if you use a sugar substitute that contains carbs)
