Default Kefir with heavy cream

Has anyone ever made kefir with heavy cream? I've been reading about kefir. How does that work with locarb?

I've read the kefir thread looking to see if anyone has tried it with heavy cream, and I don't see any info. I might have missed it, but I did a page-by-page ctrl-f on "cream".

I know you can do yogurt from heavy cream and it's excellent. Kefir... well, according to this lady's blog, it sounds like you'd end up with sour cream... which is pretty cool, IMO. I guess you'd just have to water it down or make a smoothie if you wanted to drink it.

Thanks Kristine! I'm thinking of trying it. Making it. I haven't decided yet. I love sour cream.😊

I'm finally seeing some results. I've kept falling off the wagon. This summer I started into fasting...just not eating breakfast and seeing how long I could wait for lunch. Some days go well, some don't. At first DH thought it's not good. Now he wavers between it's ok and resignation. As time goes by it is getting easier. Not much weight loss but lots of inches!!

I think it's a great idea. Just "sour cream by other means" sounds like.

^Thanks, Mike. I was wondering that. I might get back into kefir making, but that's easy for me to say while I sit here off work for three weeks.

Forsythia, congrats on your success so far! And good for you for recognizing the NSVs (non-scale victories) - you're losing fat and the scale doesn't necessarily reflect that. I hope you're feeling good, too, and that if you had any health issues going on, that they're likewise improving. Stay the course.

Thanks Kristine. Yes I'm finding IF is making it easier to continue this woe.😊 If I eat off plan a little I don't feel like I've messed up. It doesn't mess with my brain.

I've been making Kefir for about 2 weeks with some heavy cream. Yum! Not hungry for hours.

I bet it's the lactose. Heavy cream lacks it, and the fermentation process demands some form of sugar, aka "-ose."

Bingo

I've used half and half with great success. Also, whole milk from A2 cows produced the most rich and flavorful consistency.
