Default Joan's Broccoli Madness Salad

This is an awesome salad I had the other day at Sweet tomatoes. I am going to make it as soon as I buy some of the apple cider vinegar it needs. It is really really good!

Joan's Broccoli Madness

3/4 C Mayo
2T Splenda
2T Apple cider vinegar
1/2 medium onion
3 crowns broccoli
1/2 C Cashews
6 strips bacon, cooked and crumbled

Mix together dressing- mayo, splenda, vinegar and chill for 1 hour.

Rinse broccoli in cold water to crisp, chop onions, and combine dry ingredients.

Toss salad together and chill for 1 hr or overnight.

Will put in fitday totals once I make it but I think it is around 5 carbs per serving or so.

I just started reading down the list and realized this is a lot like the Broccoli salad thread. I did a search 4 it on this b4 I posted and I didnt find it, I guess it was just called something else. LOL oh well.

Sweet Tomato is my favorite restaurant, and I stumbled on to this site while searching ffor the recipe for this salad. I had it there without realizing it had bacon, so I made it with imitation (soy) bacon bits. I used Marzetti colesalw dressing, but as it had too much sugar & fat, I knew I would not be having it again. So I really appreciate your version and I wil make it tonight!

Mmm yes this sounds like a broccoli salad I had once before going LC, except it included sunflower seeds and raisins instead of cashews. I thought it was going to be nasty, but it turned out DELICIOUS! (and I'm not one to use "cious" words!)

we make this salad and it's delicious, except we use splenda and a tad of balsamic vinegar, and instead of cashews, it is raisins, almond slivers, and sunflower seeds. delicious and crunchy. i just leave the raisins out of my seving. if you want variety, try it with chopped up broccoli slaw or rainbow salad. delicious and even crunchier. thank you for sharing. i have broccoli slaw in the fridge now so maybe i'll try it this way tonight.

I make this but I add shredded sharp cheddar and sub walnuts for the cashews
and I dont do any of the chill, wait etc-I throw it all together and eat it its delicious
