So, tell me what your favorite low carb meal is

Mine would have to be...flank steak and zucchini on the grill, soooo good!

I have several...
Chicken breast on the grill then dipped in Atkins tomato ketsup. OMG I love that stuff!!
Celery with cream cheese then sprinkled garlic salt.
sliced steamed zuccini with cooked hamberger meat on top then a dash of sauted mushrooms in butter on top then a thin slice of melted cheddar!
That is sooooo good.
I have many... but thats all i can think of at 6 am.

I'm gonna start sounding like a broken record here soon, but by far favorite meal is a huge steak (like a thick Porterhouse cut).

I pass on soup, veggies, and any of the assorted side dishes to save more room for the guiltless beef eating of yesteryear.

Default Sauce-A-Holic Here!!!

I am a sauce-a-holic
I love Bearnaise sauce..... i mean really Butter based sauces Rock!!

So i would have to say Steak of any cut... drowned in Bearnaise..

I also love Portabella's grilled on a bed of Romaine... with all the fixings..

Last night i actually followed a recipe from the Member's Recipes of this site... Chicken Cheese Casserole with sautee'd onions, celery, and mushrooms... with heavy cream and melted cheese sauce... Totally Incredible... the recipe called for green Beans... i didn't add those.. i didn't think i could have them..
It made enough for me to eat it for lunch today as well..

And my Boyfriend who is not on Atkin's... was scrapping the bowl is was sooo good...

God.. I am getting hungry thinking about it

A butterflied boneless Chicken Breast grilled, topped with Goat Cheese, Sundried Tomatoes, and basil butter.

With a big side of Broccoli, please!

Like i said... i didn't add the Greenbeans... and i used about 4 large boneless, chicken breasts cut into 2-3 pieces each... just so it was more portion friendly for me... if i have a big piece.. or two... in front of me... i will eat it with extra sauce.. hehehe


Cheesy Chicken Green Bean Casserole

Here's an idea I got from the Atkin's Friends group, specifically Dottie. I changed the recipe to use the items I had in the frig.

Cheesy Chicken Green Bean Casserole


2 cans french cut greenbeans - well drained
1 can (4 oz) mushrooms (I used fresh)
1/2 of a med. yellow onion sliced very thin and separated into rings
2 stalks celery, sliced small
2 tbsp butter

1/2 cup heavy cream
1/4 cup mayonnaise
1 cup assorted cheese cut into small dice (cheddar, jack, pepperjack, etc.) (I used a variety of shredded cheeses I had on hand)
1/2 tsp lite salt and 1/4 tsp. regular salt (or 3/4 tsp any)
1/2 tsp pepper
1/2 tsp. garlic powder

boneless chicken breasts (I used 5 small ones)

I use boneless chicken breasts to make a one dish casserole by first browning the chicken in a skillet until almost cooked. I put the chicken in the bottom of a casserole dish, and then added the butter to the skillet and sauteed the onions, celery and mushrooms until soft. Mix (everything together) the mayonnaise and cream, s&p, garlic powder, veggies and cheeses and pour over the chicken breasts. Cover and bake at 350 for 30-40 minutes. Uncover and brown if desired.

Serves 4.

You could make the casserole without the chicken and just have a vegetable casserole if you desired. If you don't include the meat, you probably could cook at little less time. You could also add a few sliced almonds.

My favorite low carb meal requires a trip to my local chop house.

I begin with a leisurely stroll to the salad bar, featuring crisp iceberg lettuce wedges, peppers, cucumber and tomato slices, topped with the creamy bleu cheese dressing.

My entre is a king-size butt of prime-rib (20 oz., only $2 more than the 10 oz. cut!), with horseradish sauce on the side and a 4 oz. order of button mushrooms sauteed in butter. A glass of the dry red house wine is an excellent complement to the tender beef.

The dinner platter is cleared, still holding about 12 oz. of prime rib which the waitress will deposited into a "doggy bag" and, once I get it home, sliced into juicy low-carb tortilla roll-ups for my consumption in days to come.

I opt for a 2 oz. wedge of gouda cheese for my dessert, and a cup of the freshly brewed Columbian or Kona Coast coffee to conclude my meal.

Net Carbs ~ 12-14

This thread is making me HUNGRY
My favorite Lowcarb meal would have to be Porterhouse on the grill, tossed salad w/ homemade blue cheese dressing. That's it..I'm a simple gal oh yeah..don't forget the chablis

I also love to make hot wings..and serve them with a HUGE plate of salad & again...blue cheese dressing.

Nothing fancy..just YUMMY!

I got this amazing recipe off the Atkins website for Thai ginger shrimp curry with only 4 net carbs a serving (and the servings are HUGE) and ADORE it.

Place it on top of wilted spinache w/ a few drizzles of full fat yogurt and a dash or two of nutmeg (it sounds crazy, but it's a taste sensation!) and I'm in heaven
