Default Basic Vegetable Soup

This is a very basic vegetable soup but such a staple in my diet. I try to make it every Sunday to have for lunches. It also aids in digestion because of the cabbage. Amounts depend on how much you want to make

1. Cabbage
2. Celery
3. Carrots
4. Onion
5. Squash (optional)
6) 1 large can of diced tomatoes
7) Garlic (lots) - I use the squeezable bottle (I am sure fresh is better)
8) Bouillon in a jar

- Allow the chopped onion and garlic to saute together in a pot (with a little olive oil) for a minute or so
-Slowly add the other vegetables
- I add the cabbage last (don't skip this one; it's a good one)
-Add an ample amount of the "Better than Bouillon". I feel this tastes much better than bouillon cubes and chicken stock.
-Add other seasonings (pepper, basil, thyme)
-Add diced tomatoes

I usually cook on low, stirring occasionally. You should add some water, but I have found the more water I add, the less flavor. I also feel the soup tastes better if it sits for a day in the fridge, so I make it a day in advance. I usually eat 2-3 bowls in what sitting.

If you are particularly hungry and vegetables don't do the trick, you might want to pair with some chicken fingers.
