Thumbs up Low Carb Chili

Chili 1 1/2 lb ground beef 1 med onion chopped 3-4 cloves garlic chopped 1 or 2 tbls chil powder 2 tpsn ground cumin 1 tspn dried oregano leaves 2 cups sliced mushrooms 1 141/2 oz can diced tomatoes 1 141/2 oz beef broth 1 15oz can tomatoe sauce 1/2 tspn ground coriander Brown onion in 2 tbls olive oil, add garlic & beef, cook until brown, add tomatoes, broth, tomatoe sauce, stir in spices & mushrooms & cook 1 hr on low, stir in coriander when done. Serve with sour cream or cheese.

Your lc chili recipe sounds fantastic. Even better than the one in the PP book which didn't sound too bad. When it gets a little colder I will have to fix both of them.

Question: Assuming one leaves out the beans ... what is inherently high carb in chile? In my opinion? Nothing. Chile - minus beans - is, by nature low carb. Just as stew - minus potatoes - is, by nature low carb. Or lasagna - minus the pasta; use eggplant or zucchini - is, by nature low carb. Learn to see where good substitutions are, and cooking becomes infinitely easier
