Nice paleo/dairy-free alternative to the real deal. I do agree with the first comment, though, that it would basically be cauliflower soup for me. Heh.

I always thin it with 1/2 cup cream and top it with a few tbs of butter. It akes an awesome loaded "potato" soup topped with green onions, cheddar cheese and bacon too
