Default My Veggie Salad

Alright, for all y'all that find salad as snore worthy as I do, try this instead:

1 small head of Cauliflower (small! or three cups chopped).

3 cups chopped Broccoli

2 medium yellow squash (crookneck)

2 medium zucchini

1 medium bell pepper (green)

1 large red pepper

1 medium yellow pepper

2 medium carrots



Chop the HELL out of the aformentioned veggies... we're talkin' about MORE THAN BITE SIZED small.

I finely chop all ingredients, throw into a HUGE mixing bowl (this seriously makes a TON), stir it up and there you have your veggies.

Salad bores me to tears, so this is what I eat instead.

It makes 14 cups, which turned out to be 90.84 carbs, minus fiber 33.70, divided by 14 = 4 net carbs per CUP.

So you could have four cups of this a day and stil have 4 carbs left over for what's in cheese or whatever else you're eating.

This salad is VERY CRUNCHY and tastes best (well, i guess to me) with homemade italian dressing.

I just whipped up some olive oil, lemon juice, garlic, basil, pepper and salt.

Anyway, if y'all try it, hope ya like it. It's easier to eat a cup of this than it is to count out five million lettuce leaves for 2 carbs. ZZzzzzZZZZZ

It's a heck of a lot of choppin'! Takes me about 30 minutes or more to do it, but hey, ya know, it makes a TROUGH of "non-thinking" salad, so bring it on! HA!

When I was finished last night and had it in the HUGE mixing bowl, my husband walked by and I pretended to be eating it all and said "sorry I didn't make enough for you honey".

Yeah, I'm a dork.

It's just such a MOUNTAIN of salad, it's hilarious.

Oh, and after I mix it all up, I put it in a ziplock bag so it stays fresher longer. You'll probably have to eat some of it first to get it all IN the bag though.

And, I'm sure you could add some other veggies to it on top or something if you like cucumbers or tomatoes or whatever. I just try to keep the slime factor down with "dry" veggies, otherwise if you add the slimey ones to the entire thing the salad seems to get gross and slim-i-fied really quickly, so then you're out your 12 bucks of veggies a lot sooner. Blah.

I make a similar salad and instead of italian dressing, I add mayo, bacon, some cheese, splenda, and lemon juice. It marinates in that and it's great. I'm not a huge veggie lover so I have to change it up a lot.
You're right, it does make a huge pile!
