Default I could use some help with meatless menu planning!

I need help figuring out about a week's worth of meatless menus.

Right now I'm coming up on "the nine days"- a period of time when Orthodox Jews don't eat meat. Both of the Temples (first and second, in the exact same spot but different times in history) were desecrated on the 9th of the Hebrew month of Av. The time from the first of Av until the 9th of Av are considered a period of semi-mourning, and one of the things prohibited during this time is the consumption of meat and wine. I can still have fish, eggs, and dairy products.

I'm not going to have fish for every meal, so I need some help figuring out vegetarian low carb meals. In the past, I would serve a lot of beans and pasta dishes during this time- that's obviously no longer an option. Soy doesn't really agree with me- I could serve it once, but no more than that or it will affect my health. I can't have cow's milk protein (butter and cream are OK) and the only kosher non-cow cheeses available to me are mild goat milk cheese and sheep milk feta.

Any ideas besides tofu stir-fry and quiche?

How about:
1. broccoli cheese soup (goat cheese would be perfect in that)
2. egg plant pizzas (thick sliced eggplant topped with pizza sauce & either goat or feta cheese)
3. spaghetti squash casserole (w/ butter, cream & goat cheese)
4. shrimp or lobster bisque
5. french onion soup (minus the bread....not sure if goat or feta cheese would be good on this, so maybe minus the cheese too)

Thanks for the idea about spaghetti squash! I don't know why that never occurred to me.

The eggplant pizzas are also a great idea- I can make those for myself when I make regular pizzas for the kids.

google Sephardic vegetarian dishes there are MANY

one of my favorites is a Persian KuKu it is an omelet made with lots of olive oil, garlic and a veggie usually eggplant and just enough different

soups are good like pumpkin soup
chowders
stir fries leave out the meat
dips with veggies
