Thumbs up Spinach Pancakes with Sour Cream

2 cups of fresh spinach, cooked, chopped and cooled
1 egg, beaten
1 ounce cheddar cheese
1 Tbs. onion (optional)
3/4 Tbs. olive oil

Sour cream and salt to garnish.

Heat oil in non stick pan.

Mix spinach, egg, cheese and onion.

Drop mixture to make 2 *pancakes* Fry until golden on each side.

Serve with a dollop of sour cream and sprinkle with salt.

Serves 1
* 2.5 net carbs plus sour cream.

I'm lazy and usually use frozen spinach. DO you think I can use it if I squeesh most of the water out or do you think there will be too much moisture?

PS - Made your pumpkin squares today. They are WONDERFUL! This is the first day I've really over eaten since I started this woe. (All pumpkin square related.) They are so good, especially with whipped cream on top. They are definitely on the Thanksgiving menu now. I'll have so many people to share them with that I won't be able to overdo then.

I must have done somthing VERY wrong cause it came out awful. Could it be that I used Safflower oil instead of olive oil? I did'nt think it would make a difference but now Im wondering..
