Post simple cauliflower mash

my whole family was having salmon and mashed potatos for dinner and i thought what could I do to make side that tastes/looks likes mashed potatos. then i remembered in the atkins cookbook there was a recipe for cauliflower mashed potatos but it was a lot more carbs and i didn't want to risk anything. I ended up needing only 2 ingrediants, and thats if you don't want any butter.

serves 1 person:

4-6 medium heads of cauliflower
light cream

1. steam cauliflower in a pot
2. put steamed cauliflower into a blender
3. add cream to your liking
4. blend from least power to highest power until mashed into tiny bits (it won't come out completely mashed, but it works)

its pretty good to and creamy if you make it right. add some butter if you'd like

Do you have a hand mixer???? It'll work great! I had mashed cauliflower tonight ! I put it in a baking dish and baked it for 15 minutes then topped it with shredded cheddar and sausage! Too yummy! Next time I am going to throw it in an iron skillet on top of a thin layer of low carb corn bread (don't have a recipe for that...yet).

I actually found an easier one than that
Cauliflower & mayonaisse!
the recipe is on the back of the Hellmans mayo jar
just microwave the cauliflower flowerets about 9 minutes and stir in 2 tblsp mayo while mashing with a fork-oh and sprinkle some garlic salt
its really good and its ready in 10 min. no mixer or blender.
Sometimes I stir in bacon bits and/or shredded cheddar

my cauliflower mash: does not consist of DAIRY(for all you out there who HATE DAIRY or are lactose intolerant)
-cauliflower steamed(and put into a blender)
-1 bell pepper(any color..chopped and put in blender)
-1c. chicken broth(non fat)
-1/2 onion
-3 tbs. DILL
-2 tbs. GARLIC
-1/2c. water
BLEND TOGETHER and VOILA!! Its more of a soup depending on how much liquid you put in it.....TO make it a full meal for myself, I usually cook Scallops on the side and put them into the "mush"---ITS AMAZING!!

I like the texture best when the water is pressed out before I put it in the food processer. I also add butter and/or a bit of cream cheese. I usually also add pesto (I make and freeze cubes every fall). The pesto fools people who don't like the cauliflower taste.
