Default What's us Canadians Making for Thanksgiving?

Well, what's everyone doing for LC Thanksgiving?

On my table...

Pickled cherry peppers stuffed with goat's cheese and pancetta
Chai Spiced Nuts
Pork Rinds
Mushroom Tapenade...maybe

Roast pork shoulder, gravy, cranberry sauce
Shepherds Bread stuffing
Cauliflower puree
Spinach and Feta casserole
Roasted daikon radish
Braised red cabbage with grainy mustard
Roasted yellow pattypan squash with heirloom tomatoes

Pumpkin Chiffon Pie
Something chocolate...probably chocolate pate

And I will be thankful for many things. Most of all for the health I've gained through eating like this!

Come on Nat! What are you making?

I started this thread to get everyones wheels turning! There could be many great ideas out there that people are keeping a secret. If not for our Thanksgiving, maybe for American Thanksgiving or Christmas!

I told you already! lol

Your fabulous nobake cheesecake and the pumpkin shiffon pie (actually I've made them already). I am mooching off my parents as usual at the holidays (My mom and dad are both doing LC) and off my boyfriend's sister. I'll have more scrumptious food details, but only AFTER they've been ingested

Default I LOVE Feta cheese!!!!

Hi Karen,
Us Californians would really like a copy of your spinach and feta cheese casserole. I've been searching around and can't seem to find it.
Thanks in advance,
Carmen

Hi Carmen,

I don't have a recipe for it, I just threw it together. If you have a or can locate recipe for spanakopita, the filling without the phyllo crust would come pretty close to what I made.

Default mmmmmm

Let's see:

We had leg of lamb prepared with a dijon coating from Fran McCullough's Low-Carb Cookbook, roast mini red potatoes (for everyone else at the table), dinner rolls (also everyone else at the table, broccoli, cauliflower puree, no-bake cheesecake and my nanny's famous coffee cake.

Happily rolled away from the table. If you haven't tried the coating (works for beef, pork or lamb) you should...its excellent!!!
